My first camera was the Canon Rebel. This is a fantastic starter camera that you will love for many years! I took thousands of pictures with this camera before I upgraded to a Canon 70D.

The very very BEST beginner lens is the 50mm 1.8. No question.
POST PROCESSING
I almost exclusively use Adobe Lightroom. I can't say enough about it. It is an amazing program that is user friendly and intuitive. There are very few things I can't do in Lightroom, but when those things come up I use Adobe Photoshop.

Sorry. There is no shortcuts in my opinion to a less expensive post processing. Adobe Lightroom in my opinion is the ONLY way to go.
